I have been a fan of smoked cheeses, smoked meats and smoked fish since I started hanging out with the elders at my hunting club back at the Jersey Shore. Those good ‘ol boys really know their way around a smoker!
For our first Christmas in Marathon Florida Keys, Christy bought me a Bradley electric smoker and there was no stopping me from that point on! I now have two smokers to handle your fish smoking needs.
Depending on the fish I’m smoking, I use various flavor bisquettes. Maple and mesquite are my favorites. At Christmas time, there’s nothing like a little Jim Beam to light your fire!
From November through February or March, when the mackerel are bountiful, I enjoy smoking fish for our customers. I vacuum seal the smoked fillets in our professional grade FoodSaver and mail the packages via USPS Flat Rate Priority Mail.
We recently tried a new twist to our smoked fish using a Cracked Pepper, Garlic and Herb Rub before the smoking process. The result … YUM!
